How we cook over a live fire: the philosophy of open flame

Fire is not just a way of cooking — it's the character of Vesta's kitchen. Every grilled dish gets its smoky accent, and the vegetables and meat get a crust you can't replicate on an ordinary pan.
Temperature and moisture
We work with different kinds of wood — from fruit to oak. Each gives its own aroma and burning temperature. Time and distance to the coals decide whether a dish is juicy inside or richly crusted.
